Bay shrimp tostadas

This is such an awesome dish, if I could i’d eat it everyday!

Ingredients:

  • 2-3 pounds cooked bay shrimp
  • Lots of lemon juice, like A LOT!
  • Salt, just eyeball it
  • 3 bunches of green onion diced
  • 2 white onions diced
  • 1 bunch of cilantro chopped
  • 4 tomatoes diced
  • 3-4 jalapenos diced into little, itty-bitty pieces
  • 2-3 avocados sliced
  • 1-2 packages of tostadas
  • Tapatio sauce
Directions:  Rinse the shrimp in cold water, place them in a bowl, add your salt and lemon juice and the rest of the veggies I mentioned above, mix well and place in the refrigerator for about an hour.  Serve chilled.  Top the tostada with a few scoops of the shrimp salad, add sliced avocado for a pretty garnish and a few drops of Tapatio sauce.  Of course you can add, or omit some of the ingredients, according to your liking  Enjoy!

Roasted pumpkin seeds


  • Ingredients:
  • Pumpkin seeds (straight from your pumpkin that you are carving)
  • EVOO
  • Salt
  • Lemon juice
Preheat your oven to 325,
Next separate the seeds from the pulp and strings and rinse:

Lay them on an oven sheet, lightly drizzle EVOO, salt and lemon juice.  Let them cook about 25 minutes and they will be done.

Cauliflower and Asparagus in the oven. Simple recipe

Ingredients:
  • 1 or 2 cauliflower heads
  • 1 or 2 bunches of asparagus
  • EVOO
  • Garlic salt
  • Parmesan cheese
This recipe is all about simplicity...im sure you can find other ways to make this.....

Preheat your oven to 450 F

Obviously you want to rinse your veggies:
Next, lay them on an oven sheet, drizzle evoo and sprinkle garlic salt (for both cauliflower and asparagus) and for the cauliflower sprinkle parmesan cheese:

Let them bake for about 45-50 minutes.  Enjoy!  Tastes better when they are warm, so eat them up right away!

Chilaquiles

This morning I had the urge to make chilaquiles for breakfast, it's a traditional Mexican meal that is eaten for breakfast.  Enjoy!
 Ingredients:
  •  Corn oil
  • 6 tortillas
  • 6 eggs 
  • Garlic salt
  • 1 can red salsa (El Pato)
  • Sliced white onion
  • Jack cheese
  • Sour cream
  • Cilantro
  • Jalapeno
  • Parmesan cheese
Slice your tortillas like this:
Next place half of them in a hot pan with corn oil (its important to do half at time so they cook evenly) Let them cook until you see that they are golden brown and you can feel with your wooden spoon that they are crispy like this:
This is how they should look (some pieces are burned, but they are still yummy!) As you can see I placed them on a plate with a paper towel to absorb some of the oil.:
Next you want to put the tortillas back in your pan (it didn't mention you should use a non stick pan) and add the 6 eggs, I have whisked them with garlic salt, you can use salt and pepper if you wish, I love garlic salt on my eggs.  You don't need to add more oil, the pan should already have some.
Cook your eggs thoroughly, add your canned red sauce, you can use green sauce, no sauce, or you can make your own sauce too!:
Mix your sauce with the eggs, let it cook together for a few minutes, while its cooking, slice some onion:
Place your sliced onions in the pan with the eggs, mix around.  Next add shredded jack cheese (no need to mix that):
Next time to plate your food!  Place your eggs on a dish, add a dollop of sour cream, a few sprinkles of parmesan cheese, a few sprigs of cilantro and for those heat lovers a fresh jalapeno!:

I decided to share my passion of cooking on a blog!  I hope you enjoy this.  This blog is going to be full of yummy food that I make in my home and serve to my family.  It's not the "Food Network" but hey, it's GOOD!!  Some recipes will not have exact measurements (sometimes I eyeball it) and sometimes you will not find any pictures.  I hope I inspire my readers to try my recipes, even if it's just one person, that's amazing!  I am a full-time employee and a full-time mommy, you CAN cook in between all the madness!!  Just one step at a time is what keeps me going!  ENJOY!
