This is such an awesome dish, if I could i’d eat it everyday!
Ingredients:
- 2-3 pounds cooked bay shrimp
- Lots of lemon juice, like A LOT!
- Salt, just eyeball it
- 3 bunches of green onion diced
- 2 white onions diced
- 1 bunch of cilantro chopped
- 4 tomatoes diced
- 3-4 jalapenos diced into little, itty-bitty pieces
- 2-3 avocados sliced
- 1-2 packages of tostadas
- Tapatio sauce
Directions: Rinse the shrimp in cold water, place them in a bowl, add your salt and lemon juice and the rest of the veggies I mentioned above, mix well and place in the refrigerator for about an hour. Serve chilled. Top the tostada with a few scoops of the shrimp salad, add sliced avocado for a pretty garnish and a few drops of Tapatio sauce. Of course you can add, or omit some of the ingredients, according to your liking Enjoy!
